Butter Chicken Recipe 


2 cups water

500 grams tomatoes

50 grams onions

1 bay leaf

1 stick cinnamon

1 black cardamom

4 cloves 

9 garlic cloves

1 ginger 

Kashmiri red chilli powder

2 Tbsp butter

12 cashew nuts

500 grams boneless chicken


2 Tbsp lemon juice

1 Tbsp ginger paste

1 Tbsp garlic paste

4 Tbsp mustard oil

1 cup hung curd

1 Tbsp methi leaves powder

1/2 Tbsp sugar

2 Tbsp cream


(1) In a hot frying pan, add 2 cups water, 500 grams of roughly chopped tomatoes, 50 grams of sliced onions, bay leaf, 1 stick cinnamon, 1 big black cardamom, 3/4 cloves, 3/4 little cardamom, 8/9 garlic cloves, 1/2 small piece ginger, 1 Tbsp kashmiri red chilli powder, 2 Tbsp cube butter, 12 cashew nuts. Give it a good stir and cover the frying pan on low heat until the tomatoes becomes wilt.

(2) Now in the meantime, take a medium sized bowl and add 400 grams of boneless chicken to it. add some salt, 2 Tbsp lemon juice, 1 Tbsp ginger paste, 1 Tbsp garlic paste. Mix well.
(This is called first marination. First marination is always required in this recipe because marinating helps the chicken to absorb the salt) leave this first marination for 15/20 minutes.

(3) Now, take another medium sized bowl and add 4 Tbsp mustard oil to it. add 1/2 Tbsp kashmiri chilli powder. Mix well. add 1 cup hung curd, add some salt and 1 Tbsp lemon juice. Mix well.
(This is the second marination for the chicken)

(4) Squeeze out any excess water from the chicken of the first marination and put it the chicken in the second marination bowl. Mix well.
(Leave the marinated chicken for 15/20 minutes)

(5) Now, turn off the frying pan and add the curry into a blender to puree.

(6) After pureed the curry, take a medium sized bowl and add the gravy to it.

(7) Now, it is very important to strain the gravy, so that we can get smooth, silky and butter chicken gravy.

(8) Add 2 Tbsp of butter in a frying pan and heat it until the butter gets melted.

(9) Add 1/2 Tbsp chopped ginger.

(10) Add 1 green chilli and saute it. 

(11) Now, add pureed butter chicken gravy in a frying pan and let it cook for about 10/15 minutes.

(12) While the gravy is getting ready, now cook the chicken tikka.

(13) Add some light drizzle of oil in another hot frying pan and add the chicken slowly to it. saute both sides of the chicken for 3 minutes and let it cooked.(Remember: don't toss the chicken)

(14) Add some salt to the gravy, 1 Tbsp methi leaves powder, 1 Tbsp sugar.

(15) Add the cooked chicken to the gravy and cook for 4 minutes.

(16) Now, towards the end, add 2 Tbsp cream, add some freshly chopped coriander.

(17) Serve hot.
